Boxes of the Goya yellow rice, though delicious, has far too much sodium. This is only slightly better, but it has all the flavors. You can do your own yellow rice by using the Goya Sazon with saffron packets instead of the ones I have listed here.
This is one side dish that has been requested fairly often. It's more flavorful, I think, than any boxed version of yellow rice.
Combine in pot: chicken broth, chopped onion, chopped green pepper, chopped chicken breast, can of Rotel, black pepper and chili pepper to taste. Cook over a slow rolling boil until onions and peppers. Allow to continue to simmer for a short period for the flavors to develop.
In a soup bowl, dice 1/4 to 1/3 of an avacodo into the bottom of the bowl. Add fresh cilantro leaves.
Ladel the soup over the avacado and cilantro. Top with crumbled tortilla chips (or homemade fried tortilla strips made from corn tortillas).

Great little Warm up Soup! Calories for the Ham Hock was hard to find, maybe be a little off.

Pollo asado JUST means "seasoned chicken" in Spanish. If you do this with a three pound bag of boneless, skinless chicken breasts, you can freeze it in single portions, use it over a salad, throw it in a casserole, or do what we did-make chicken burritos on low carb multigrain tortillas.
