Brined Herb Crusted Turkey with Apple Cider Gravy

Recipe courtesy Anne Burrell from Food Network.

It takes some time, but is well worth it.

Calories include Brine, Gravy, and Turkey. Might be less because you don't eat the brine itself - I don't know how to calculate that. -sorry.

Beth's Natural Pumpkin Oatmeal
Beth's Natural Pumpkin Oatmeal

This is a delicious take on another recipe here on spark.

This yummy breakfast option has less than 200 calories, is very filling, and can be made in about 10 minutes! Since sucanat (sugar cane natural) is used in place of sugar, it is a much healthier, much more natural way to enjoy a slightly sweet treat.

If you are unfamiliar with sucanat I suggest you read a little bit about it and give it a try. It's good for you, for the farmers and for your family. And once you cut back on refined sugar (white/granulated) this will definitely be sweet enough for you. Although, I will warn, that if you are used to having refined sugars in your oatmeal this won't taste sweet at all. Feel free to add a couple teaspoons of sugar to it if you like, just don't forget to track them separately!

Carol's Gumbo
Carol's Gumbo

This recipe has been adapted from Ken Wheaton's book The First Annual Grand Praerie Rabbit Festival. Carol substituted chicken for turkey and doubled many of the proportions given the large amounts of leftover poultry we had from Thanksgiving. Additionally, she used okra instead of filé to thicken her broth as well as a handful of new spices and ingredient substitutions. For the original, see here, but for Carol's, keep reading.

Pecan Pie
Pecan Pie

As November suddenly creeps up on me, I've been tackling my holiday to-do list.

At the top: develop, test, and master a new version of my grandmother's Pecan Pie recipe that doesn't use corn syrup, but a healthier option without sacrificing the sweet, gooey center. http://www.clearlydeliciousfoodblog.com/20
