Vegetarian Meals Recipes (Most Popular)
Way back when I was a reformed omnivore and lived the vegetarian lifestyle, though I missed some comfort foods, like meatloaf. I tried many recipes and eventually pulled together this recipe. I have fooled a few omnivores who thought it was made with beef. To make this vegan, omit the eggs- the texture will be a bit more crumbly.

These pancakes are easy, filling, and yummy (a lot like banana bread) but not heavy. They contain complex carbs and good fats as event fuel, and protein and potassium to help your muscles recover afterwards. They can easily be prepared ahead of time and eaten in the car on your way to the race. :)

This is the lowest fat version I could figure out, using puff pastry rather than traditional dough that needs to be fried, this is baked instead. SO GOOD!!!
