OK...no one said it was health food. But I needed to make a special cake for a birthday celebration.
This does not use a lot of sugar, and it SO good it is worth the treat. And yes, I always get 16 servings, half for the celebration, and half to freeze.

This is a yummy buttercream that works well when being piped or just spread over cake or cupcakes! Once you make this buttercream, you'll never want to buy frosting again! Super easy and delicious!

The total calories for one cupcake with frosting is a little over 300 calories -- a little off diet, but if you take it easy on the frosting you can enjoy one once in a while without too much guilt!

I think the title says it all! This was what my mom and I came up with for this year's birthday bash... it's vanilla to the max, but the cake itself is not super sweet - we left that for the decadent filling, frosting and ganache!

1/2 recipe - covers 24 mini and 8 regular cupcakes

* *Domino Confectioner's Sugar, 3.75 cup (remove)
* *Organic Valley Butter - Unsalted, 8 tbsp (remove)
* *Organic Valley Organic Skim Milk, .25 cup (remove)
* *Cocoa Powder, Hershey's Natural Unsweetened, 8 tbsp (remove)
* Vanilla Extract, 1 tsp (remove)

This will frost two 8" or 9" round cakes.
