Mom's Chilaquiles
If you're unfamiliar with Chilaquiles; it's a mexican dish with similar to nachos but is prepared a little bit differently. I describe it as a cross between nachos and lasagna. Not because it has anything to do with Italian flavors though. Think of the way lasagna is prepared- sheets of pasta layered with filling and sauces in between. Chilaquiles is similar, but instead of using pasta sheets you're using layers of tortilla chips. It's a great recipe to whip up on the weekends when you're trying to clear out your fridge. If you have smaller amounts of foods leftover- ones that cannot provide a full portion, throw them into this dish so they will not go to waste. I'm very much a believer in making sure that no food gets trashed. Whether it's leftovers, composting, or something else. That's beside the point here though. Now let's get cooking.
