I made this without the Flax Seed Meal, maybe that is why I didnt like the taste. It looked visually tasty though. I was surprised that it actuall got fluffy with only 1 minute! but the bottom of the muffin in my case tasted really really reeeaaallly like salty for some reason...
I've made this before but used Coconut Oil (which is GOOD for you) rather than the Smart Balance. You can also flavor it with sugar-free syrups and chopped nuts. This is a staple in my breakfast menu planning.
