Yummy! Like others, I used a can of tomatoe sauce and a package of low sodium taco seasoning. I also added a green pepper. I put all the ingredients together the night before. Hubby said he is taking leftovers to work tomorrow for lunch and he usually does not even eat lunch. Will make again. Submitted by:

This worked out great . I cut the amount of chicken and subbed in more beans for fiber and fullness ( it increased the calorie count a bit, but I made the portion a little smaller. I used low sodium chicken broth as well, and green chile enchilada sauce and garnished with fresh tomato. Submitted by:

This soup was a HIT, and couldn't be easier to make! I sliced up tortillas and baked them to put them in the soup. I garnished with cheese and avocado and made it a real hearty meal under 400 calories. I'll be making this again!! Submitted by:
