Huge hit! We all loved this and are thinking this will be our Taco-Tuesday replacement. I skipped the cumin (not a fan) and used frozen Hatch chile. I think next time we will skip the corn and add pinto beans since corn really has no nutritional value. Plenty left over for lunches too! Submitted by:

Very tasty. We were looking for a recipe that had beans and was low calorie that fit within our nutrition requirements and this was it. Submitted by:

I loved the flavor of the soup, but hated the little fat bubbles floating at the top. I re-made the recipe, but diced and cooked the chicken first. Submitted by:

I changed this recipe just a little. I had some homemade v-8 juice I used instead of tomatoes. I didn't have black beans but chili beans worked well. I added 4 cups of frozen green beans and 2 cups of kale. All from my garden of 2012. This is SO easy and So delishes. Very low calories also but filli Submitted by:

I made changes to the recipe so I "made-over" the recipe...only to find that the ingredients list was not the same as what was used for the nutritional calculations. Big difference between "3(14.5 ounce) cans chicken broth " and homemade chicken broth. Same thing for canned green chiles vs. fresh. Submitted by:

I just made this (as-is) and it is pretty good! I'd probably make it again because it's just SO easy to make, and low-calorie too. The recipe says it makes 8 servings, but when I meausured it out afterwards into a tupperware, I measured 23 cups! So a "serving" is about 3 cups of! Submitted by:

Made this today as-is but without the extra salt and pepper. I did add a little potato flakes at the end to thicken it up just a little. Delish! Submitted by:

Pretty good, I added some taco mix because it just tasted like it was missing something. Also had to add a lot more salt. It's a very versatile recipe so everyone can make it the way they like it. Submitted by:

This recipe was great... I added just a little bit more cummin, sea salt, garlic powder, and onion powder.... Perfectooo ... I put everything in the crockpot before I left for church and it was ready once I returned.... Submitted by:

This was so simple and so good! I did not use enchilada sauce since I did not have any, but topped with a little salsa, avocado, and fat free cheese. Submitted by:

This soup tastes like an enchilada! It is so good and all I added was a little shredded fat free cheddar cheese-YUM! Submitted by:

Awesome, i did tweek it a little bit fat free low sodium chicken broth 2 cans because that's all that would fit because i doubled the recipe, red fire roasted cut up tomatoes, low-sodium 1 pkg taco seasoning mix. I can't wait to eat some more today now that the seasonings have set in overnight. Submitted by:

This makes a TON of soup! I have a 4 qt crock pot and I couldn't fit all of the chicken stock in it. The flavor was good but I doubled the garlic and had to add more salt. There really isn't any kick and I found Sriracha sauce gave the best heat. Makes great leftover and love the calorie count! Submitted by:
