Ingredients

    100 gr dry bulgur, cooked and cooled
    2 carrots, cubed
    250 gr cherry tomatoes
    265 gr kidney beans, drained can weight
    265 gr chick peas, drained can weight
    285 gr corn, drained can weight
    100 gr raisins
    1 cup cubed red pepper
    1TBL olivve oil
    2TBL balsamic vinegar
    juice 1 lemon
    salt, pepper to taste

Directions

Serves 8

Make sure bulgur is cooked and drained, all canned veggies drained too. Make salad dressing in bottom of big bowl and add all drained, chopped ingredients and salt and pepper to taste and toss well. Great healthy lunch or side dish.
