Ingredients

1 pound lean ground turkey
3/4 cup chopped onion
2 garlic cloves, minced
2 tablespoons Extra Virgin Olive Oil (this one works great)
1 28oz. can crushed tomatoes
1/2 6oz. can tomato paste
1 cup water
1/2 chopped zucchini
1/2 chopped mushrooms
1/2 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon oregano salt and pepper to taste
1/2 package (8 ounces) Whole Wheat Lasagna
1 pound low fat Ricotta cheese(I like a lot of this in Lasagna)
8 oz. low fat Mozzarella cheese, shredded or thinly sliced
1 cup grated low fat Parmesan cheese
Directions
Lightly brown the lean ground turkey, onion, and
garlic in olive oil. Add tomatoes, tomato paste,
water, basil, parsley, oregano, salt and pepper , chopped mushrooms and the chopped zucchini.
Simmer uncovered, stirring occasionally for 30
minutes. Cook lasagna as directed on box; drain. In
13x9x2" baking pan, spread about 1 cup sauce. Then
alternate layers of lasagna, sauce, low fat ricotta,
Mozzarella, and parmesan cheese; ending with sauce,
Low fat Mozzarella and parmesan. Cover with foil and bake
at 350 degrees for 40 to 50 minutes. Allow to stand
for 15 minutes. Make 8 servings.
