Introduction
This salad is great for Spring and Summer. Gets better the longer it sits in the fridge. This salad is great for Spring and Summer. Gets better the longer it sits in the fridge.Number of Servings: 15
Ingredients
-
2 bags of Dole Classic Cole Slaw Salad Mix
1 bunch of green onions - Chopped
2 packages Chicken flavor Ramen Noodles
4 Tbsp Vegetable Oil
4 Tbsp Vinegar
3 Tbsp Sugar
2 small packages sliced almonds
Chicken Breast: You can either boil a 1lb package of chicken breast or use the chicken breast of a rotessiere chicken.
Directions
toast almonds in a 300 degree oven until they are light brown and toasty. About 3-5 minutes.
Take the hairy ends off of the green onions and chop them. White and green parts.
Take the chicken seasoning packet out of the ramen noodle package and break up noodles.
Chop up chicken. You can boil a 1lb package of chicken breast or I use the breast meat from a rotisserie chicken at the grocery deli.
In a small bowl mix the vinegar, vegetable oil, sugar, and the chicken seasoning ramen noodle packet together. (Add more or less sugar for sweetness).
In large bowl mix all ingredients and pour the dressing over the top. Mix together. Let refridgerate at least an hour before serving. Makes about 15 servings.
I like to serve it as a meal with some low fat cottage cheese on the side.
