Ingredients

    12 asparagus cut into quarters (you can steam them for 3 mins to make them softer)
    1 green apple cut into cubes
    3 cups spinach
    ½ cup shelled edamame
    ½ cup beats cut into cubes
    1 cup cucumber cut into cubes
    ¾ cup green beans cut into halves
    ½ cup cherry tomatoes cut in halves
    2 oz extra sharp white cheddar cheese

Directions

Chop all veggies and mix together - or you can layer this salad, start with the spinach on the bottom and then pile up the rest of the veggies topping it off with the cheese.

use any kind of fruity salad dressing
