Ingredients

    2 tbls Vegetable Oil
    1 Large Onion, Chopped
    2 Ribs Celery, Chopped
    2 Garlic Cloves, Minced
    2 Medium Carrots, Cho[[d
    5 Medium Potatoes (about 2 lbs), peeled and diced
    2 14-1/2 oz cans diced tomatoes, undrained
    2 cans baby clams, undrained
    1 8 oz bottle clam juice
    2 strips turkey bacon, cooked and crumbled
    1 teaspoon dried thyme

    Hot sauce of your choice if you like this spicy

Directions

In a 6 quart soup pot, heat the oil over medium heat until hot but not smoking Add onion, celery, garlic and carrots and saute fo 5-7 minutes or until the onions are tender, stirring frequently. Add the remaining ingredients and bring to a boil. Reduce heat to low and simmer for 50-55 mnutes, or until potatoes are fork tender. Ladle and serve. Add hot sauce to taste if you like it spicy.
