Ingredients

    Mix together 2/3 cup Bob's Red Mill Gluten Free flour, 1/3 cup corn or potato starch, 1/2 to 1 teaspoon salt to taste, 1/4 tsp baking powder and 1/4 tsp xanthan gum. Beat 2 to 3 whole eggs and add 1 cup milk. Mix with dry ingredients and pour into hot cups with beef drippings.

Directions

Preheat oven to 425 with popover pan in the oven and add 1 tsp oil mixed with tamari or beef drippings to each cup. Mix all dry ingredients together. Beat eggs separately and add milk. Mix with dry ingredients. It should be the consistency of thick cream. Place in equal portions into each of the cups (about 1/3 cup batter in each, and bake 15 minutes. Lower temperature to 375 and bake another 5 to 10 minutes, until they appear done. Makes about 12 individual puddings.
