Introduction

I love fried mushrooms, but only six can be over 450 calories--and if I have a dip with them, it is higher! So, instead, I "oven fry" and get the same crunch, flavor and enjoyment without all the calories. My "dip" is 3 tablespoons Duke's light mayo with 1 tablespoon yellow or spicy mustard. They don't look as golden and light as fried--but they are just as tasty and crunchy--and 20, with dip, have 366 calories! Ingredients

    20 white button mushrooms
    egg whites or egg beaters
    salt
    Pam olive oil spray
    1 cup Panko bread crumbs
    3 tablespoons Dukes light mayonnaise
    1 tablespoon yellow or spicy mustard

Directions

Preheat oven to 450. Wash and lightly salt mushrooms. Dip them into the egg whites, then roll in the Panko crumbs. Place on a cookie sheet or an oven "fryer" pan. Spray with pam olive oil. Bake 10 minutes, then turn and spray again. Cook 2-5 more minutes and remove from the oven. Let cook (they get more crispy when they cool a little). Mix the mayo and the mustard together for a dip. Enjoy!!

You can also use flavored Panko crumbs, garlic, onion or other flavorings to kick up the flavor, but I love them "plain".

FYI--the calorie count includes the mayo/mustard dip!

    I love these! I used Emeril's Kicked Up Horseradish Mustard with light mayo to make the dip and it was delicious. Also, I happened to have baby portobello mushrooms in the fridge so I used those instead of the white button. It was yummy!! - 2/8/11
