Wonderful bread recipe developed by Wendy Turnbull using her gluten free gems flour mix.
Taken from the Southern Sideboards cookbook but modified with Smart Balance sticks and whole wheat flour
I took a local class to learn the make these and I converted the recipe to use whole wheat flour instead of white, expecting that there would be a problem but instead, I came up with the yummiest crepes I've ever eaten. Now, I kinda went overboard and put a little Nutella in these to celebrate but they would be just as good with fresh fruit and other healthy fillings

If you like pancakes, but don't want the gluten or carbs then this is the recipe for you. If you use agave instead of stevia plus, then omit the water. If you use watery fruit, omit the water. You can also add 1 tbsp. of vanilla whey protein as well.

I used muffin tins but you could also use a loaf pan. I liked the muffins because it helped with portion control.
