I modified a recipe from another cookbook and have come to this version. This is easy and the muffins freeze well - I usually double the recipe. My daughter loves them for breakfast or snack.

Using tofu and flax meal together as egg replacer keeps both the leavening and the protein characteristics of the eggs used in this recipe intact. Its important to really beat the tofu down with the other liquids, though, or your pancakes will be... really weird. Like this "pumpkin pie" my ex tried to make with extra firm, nonsilken tofu and it was like pumpkin flavored tofu. Delicious. But really weird.
You can change almost anything in this recipe as long as you have 7 cups of dry ingredients and 1 cup of liquid ingredients.
This is an adaptation of a smoothie recipe made with cottage cheese which makes it very smooth.
