I came up with this recipe when I learned that I wasn't getting enough fat or protein in my diet.
My family loves this for either lunch or dinner during the summer. We usually have it with fruit on the side, but this can be ether a side or main dish.
I was trying to find a low salt version of stuffed mushrooms for a lunch or dinner meal. So I made this one up !

I made this the other day for lunch and Oh was it Yummy. I place spoonfuls on a leaf of lettuce and had a few whole wheat crackers on the side. What a filling and tasteful Diabetic Lunch.
** use Red Wine Vinegar. not cider vinegar.(couldn't find red wine vinegar on add ingred. page)
