Same as title. :P

Saw some yummy rolls at the store and wanted something like a lobster roll and came up with this.

Wanted something taco-y, and also get that "fast food" feel. This is a pretty good approximation of Taco Bell's Mexican Pizza, only healthier. Obviously, leaner meat would make this even better, but I used what was on hand.

Adapted from an Eatingwell.com recipe, I used what I had on hand for a tasty soup.

The addition of Feta cheese and the Balsamic Dressing gives this crunchy salad a lot of flavour.

I'm going to use a different cheese or no cheese next time to cut the salt. Also I only used 2 tablespoons of Fresh Express Cranberries so the carbs are lower.

It takes time but its really worth the effort!!
