add 1 box Pillsbury pumpkin bread mix, 1 1/4c pumpkin, and about 1/2c water (mix should be moist) and divide evenly between 12 foil cupcake tins. Bake at 400 for 25+ min (check to see if center is cooked with toothpick). Remove, cool, and enjoy!!!!
My take on zucchini bread; it has apples, bananas, carrots, and zucchini. We love it with pecans.

I make my own "instant oatmeal" packets at home with dried fruits and nuts and I always run out of oatmeal before I run out of everything else. So I made this trail mix with the leftovers. Yes, I could have just saved them but trail mix is delish.
