A variation of a popular soup in Okinawa — a "blue zone" or region with an exceptionally long-lived population.
Combine all ingredients except chicken into botl and combine well. Add trimmed and cubed chicken. Marinate covered in refridgerator for 2 hours. Pour mixture on a sprayed cookie sheet lined with foil. Cook at 350 until cooked through depending on size of cubed chicken about 15 minutes.
Inspired by a recipe from Cook's Illustrated magazine. Before the recipe, they say:
We prefer the flavor and texture of chunky peanut butter in the sauce; in particular, we like conventional chunky peanut butter because it tends to be sweeter than natural or old-fashioned versions.
Any season side dish. Great when serving with sausages or with greek dishes as it has a nice bite, is low in fat and calories and can be done ahead of time.
