I took my favorite Chinese takeout item and turned it into a healthy version that is lower in sodium (and without MSG!). This soup is great any time of the day, and especially wonderful in the colder months. Plenty of healthy protein makes this an optimal choice for weight loss.
Saute onion, chopped carrot and chopped red pepper in the sesame and canola oil. Add chicken and 3T soy sauce. Add rice. Move to the side and add egg and 1T soy sauce and scramble. Combine all and add peas (after cooked in the microwave).
Like Foil wrapped chicken? Vegetarian? This is better. I don't waste time with the foil though, just mix and bake.
