My mom's ratatouille, a famous, French stovetop casserole with eggplant, tomatoes, zucchini and mushrooms. A carrot and red pepper add a hint of sweetness to the mix.
Mix shortening, sugar, eggs and molasses.
Mix dry ingredients in a separate bowl
Gradually add dry ingredients to the shortening mixture, while adding 1 cup of hot water intermittantly.

I love Spanish chorizo! It packs a lot of flavor, and it is a bit spicy, which I like. I also use Jalapenos instead of Green pepper (without the seeds) to give the omelette an extra spicy kick. Yum!
My (and my mom's) version of the classic French Onion Soup. Using Julia's recipe as a base, this uses butter and bacon fat to saute, gets a splash of cognac and a cup of wine along with the rich, flavourful beef stock. My stepbrother (who requested it in the first place) ate two huge bowls!
This recipe is for large individual souffles. Smaller souffles can be made in 6 oz ramekins baked for 12-15 minutes.
