This is a WW recipe. We lightened up this Italian favorite by using reduced-fat and fat-free versions of many of its staple ingredients.
Sicilian Pork Chops passed down for 3 generations, but made a little healthier. :-)
Adapted from a recipe found in Real Simple, March 2008, this is tasty and healthy, with minimally processed ingredients. You can also prep it ahead of time to store in freezer bags, for a time-saving freezer meal.
Good and Filling Lasagne, you can cut out the meat and sausage layer to save calories and fat. Also use only one slice of bacon in the meat sauce.
This is an incredibly rich dish, a full dinner in itself or served with a green vegetable. It's very filling, and the eggplant and mushrooms add a depth of flavor and bulk without adding much in the way of calories.
Makes six 1.5 cup servings.

I adore the Chicken and Gnocchi Soup from the Olive Garden, so I decided to make it for myself with a few additions and substitutions. It has been very popular both within my family and among company.
