This is not too low calorie or healthy, but quick and easy cookies.
this recipe is just the filling. it does not include the toppings. if you use 2 oz. of filling this recipe will fill 16 tacos. (old elpaso says two hard shell tacos = 1 serving. ) if you don't want to make 16 tacos you can certainly cut this recipe in half.
I made these to satisfy a craving my sister (who's pet name is Schmee) was having for the jumbo double-chocolate-chip muffins that Costco sells. While they aren't AS big, they are still intensely chocolate, and sure to please any fiend out there when they're warm or cold! They also freeze well, and are delicious microwaved for a few seconds to warm em up.
Similar in texture and taste to a Costco Double-Chocolate Chip muffin, but with a little less guilt factor going on! Makes a giant muffin, easily two servings (which the NI reflects).

I was experimenting with this...still am. But it is a good after school treat for the kids. not too sweet and low fat. Good for them as well as tastes good.

If boxed Mac & Cheese is a comfort food for you (I know it is for me!), this is a great way to sneak in some protein and veggies while still getting that cheesiness that you crave :) I've tried making homemade macaroni and cheese before, but I always had to add an obscene amount of cheese to make it taste okay, so it always came out with more calories and fat then the boxed stuff.
