Dairy free soup that still tastes creamy. Feel free to switch out kale for spinach and use onion for leek. I used 3c chicken broth and 2c water, but that can be adjusted as well to be any combination of water and vegetable or chicken broth. At about 250 per serving, I usually have it with a salad for lunch.
I was really excited about trying one of the salsa chicken recipes on here, but almost all of them include some sort of cream soup and/or sour cream. So here's my "dairy-free" spin on it for my lactose intolerant friends. :)

ommit tuna to make vegan, or just serve seperatly as a sandwhich and dip with veggies. very good rolled into a chinese cabbage leaf instead of bread, on the side of spicey veggie soup.
For the apple dumpling lovers. Serve as a dessert, at brunch or at breakfast. Still a bit sinful but healthier than traditional.
Fresh and tasty tilapia. Add a shake of Tony Chachere's Seasoning to make this a spicy sweet treat!

This is a great summer meal and quick and easy to put together and tastes wonderful. Refreshing served with the cucumber sauce (nutrition value not included).
I adapted this recipe from Westsoy Organic Unsweetened Soymilk, adding an extra egg white, Quinoa flour and walnuts to increase the Protein levels

Coach Nichole's mini frittata recipe inspired this. I had some leftovers and a bunch of eggs. Dairy and Gluten Free. Great for dinner or breakfast. Would be perfect for brunch!
This is super easy and even my picky eater will gobble it up (as long as he has Tasbasco!). Also GF and soy free!
For a sturdier frittata, add 2 more egg whites. I served this with Refried Sweet Potatoes.
For non veggie lovers, feel free to drop the parsnip or squash. I was low on meat so I got a little enthusiastic! Well, that and the trip to the Farmer's Market.

A tasty alternative to using salt pork or bacon. This recipe is calculated with fat free low sodium chicken broth. To make it vegetarian, just use mushroom broth instead for a great depth of flavor.
Got the potato crust idea from a quiche recipe on allrecipes.com, great quiche that is gluten and dairy free.
This is based on changes I made to another SP recipe, trying to lower the sugar and calories. At 83 calories each they aren't quite low calorie but I think they're pretty wholesome for a cookie. Using vegetable oil instead of butter cuts a few calories and isn't as expensive as using Smart Balance.
Cool, refreshing, and decidedly healthful, this is my absolute favorite drink. I despise coffee, and I find this gives just enough caffeine in the morning to gently wake me without giving me jitters. I prefer it iced, but you could just as easily serve warm.

Matcha is ground green tea leaves native to Japan, used in tea ceremonies there. You know the health benefits of green tea everyone has been raving about? 1 tsp of matcha is as beneficial as up to 6 tsp of brewed green tea leaves because you actually eat matcha powder instead of tossing it away after brewing.
Get yourself a decent matcha powder. Check your local asian supermarkets. Find a container sealed with a vacuum/nitrogen lock. Make sure it is grown in Uji for best quality. "Thin" Matcha is fine for this drink and other recipes.
