I had this in Mexico and it was so0o0o0o good! Simple to make, perfect for two, and perfect for summer!
This is a simple, flavorful salad. For a vegetarian version, substitute canned kidney beans for the chicken. Can also add about 6 baked or Fat Free Doritos for excellent crunch and flavor, but you will have to adjust the calorie count.
This dressing is my favorite! I've never tasted any dressing that I've liked so much. If you really like garlic then you will like this, but if you want to make it less garlicky then just decrease the garlic powder. Also you may find you need to add more soy milk after a couple of days as the dressing thickens up. Can be used as a dressing or a dip depending how thick you want it.

I had a little bit of tuna left from a large can, but not enough for a sandwich, so I made this for lunch today based on what was in the fridge. Next time I might change up the veggies, and probably add some lettuce for a larger portion.

Great on steak salad- 2cups mixed greens, tomato, chopped onion, and 3oz. of lean beef.
We make this salad when we need to include veggies in our diet. It's easy to make and includes things that we typically have on-hand at home.
A different salad which also works with other fruits than Blood Oranges such as strawberries, raspberries or apples. The season for Blood Oranges is so short--why not give it a try. It is very refreshing.
