A delightful, healthy variation of an old favorite. I've substituted green peppers for the layer of onions. And use a light mayo along with splenda for the dressing.
Fast salad and all of our 5 kids love it! Don't have to twist the kids arm to eat this one!
I use Penzey's Balti Seasoning in this recipe. Here's the ingredient list if you're curious (you'll see why I let them do the mixing!):
coriander, garlic, ginger, cumin, dundicut chilies, Ceylon cinnamon, brown mustard seeds, cardamom, clove, fennel, fenugreek, charnushka (kalonji, black onion seed), ajwain, star anise, black cardamom, cilantro, anise seed and bay leaf
Very light and tangy. Good alternative to low fat dressings that are highly processed.
Raw Veggies keep well in fridge for about a week. Great when you are in the mood to munch. Low everything!
This is a great salad. Serve on top of Spring mix or use as a side dish by itself. Delish!!
