From the Fix It & Forget It book. Makes a really big batch, just barely fits into my crock pot. Serve with grated cheese if you like. I like the recipe because it has kale, and it replaces pasta with more nutritious barley. Quick to put together and tastes better on day 2.
This is my family's favorite Italian wedding soup. The mini meatballs are a huge hit with the kids. Although many people use spinach for the leafy green in wedding soup, the recipe that was handed down to me called for endive lettuce, so that is what I use. Endive costs a lot less than spinach, and my family and I have always enjoyed our soup made with it. . If spinach is your favorite, feel free to make a substitution.
I wasn't feeling well one day. I saw this recipe in Redbook Magazine. I fixed it leaving out the parsnips because I had none on hand and to cut down on salt I didn't add the salt. I felt better the next day.
This is a delicious soup, and is as easy as it is filling.
Make extra for lunch through the week or to freeze!
Here's a great dish that mixes together all those veggies that are so good for you, but who knows what to do with 'em. Turned out great (if I do say so myself :)

A little different than the soup from the "cabbage soup diet". I tend to like this one much better! Fills you up with virtually no calories (you expend them cutting the cabbage!)

This is a hearty soup. You can add other vegetables i.e. clean out the fridge to add to the nutrition. It also freezes well!
