I like to clean my fridge once a week (usually Monday because Tuesday is grocery day) and make a soup to use up leftovers and veggies.
This is from "The Garden of Vegan" I added a few things to suit my tastes.
I am a lentil soup lover and this is my favourite! It can be cooked on the stove-top or in the crockpot.

Super yummy vegan pizza! This recipe and nutritional info is based on what I used, but your free to use any veggies of your choice. Use whatever vegan cheese you want, or if you just want a veggie pizza do no veggies at all! The prep time is approximate. It took me a while because I had to sliced the veggies, grate the cheese and measure everything. However, if you have some of this already done, then the prep time will be shorter.

Tasty mix of oats, nuts, raisins and coconut. It's very quick to mix up a batch, and it contains no sweetener other than raisins. With milk or soy milk, and fruit, satisfies hunger until lunchtime.
