This is very filling and makes a lot of soup. It fills my 5 quart slow cooker.

Great low-calorie way to get your daily veggies in! This can be made with any type of broth, chicken, turkey, vegetable, beef. The chicken is a hit in our house, sprinkled with grated parmesan/romano cheese. YUM!!! Makes 8-10 12-oz servings!!!!
My friend started telling me about caponata when I was wondering what to do with the single small eggplant I was able to harvest from our garden this year. She didn't have a recipe, but gave me a list of ingedients. Tried to figure it out this afternoon and it turned out good. She suggested eating it with pita as a snack or appetizer.
