This salad is perfect for lunch, it will last you until dinner for sure and it's more than delicious. If you want it lighter of course you can take out the sour cream and wallnuts but if you only eat this for lunch you shouldn't worry.

This is one of those recipes that works well after a work day or for when you have company. It's goes together easily and can be garnished with sour cream or yogurt. You can also garnish with cheese if you prefer.
