this is a great breakfast or desert! I add 2 TBL of maple syrup but you can add more or less depending on how sweet you like it. I think 2 is fairly sweet especially with the bananas but if you don't like it sweet you can omit the maple syrup completely.
You can use whatever type of milk you like, I prefer the canned coconut milk- just give it a good stir as it tends to separate in the can.
This is a great breakfast casserole that reheats really well. You can make it on the weekend and enjoy it throughout the week for breakfast when you may not have as much time to cook. It’s also very filling due to the higher fat content. We actually had this for dinner tonight. It’s easy to make, inexpensive, and plentiful. In fact, if you are cooking for just a few people, you may want to cut the recipe in half.
Baked oatmeal cups. Pour into muffin tins and top with fruit (apples, banana, blueberries, peaches, etc.), nuts (pecans, almonds, walnuts, etc,), coconut, or any combination of toppings.
This makes two very tasty pancakes. You can double and triple it for a family. This is so good I pre make them and reheat them when I'm on the go in the morning.
