Very filling and very delicious muffins, very low fat! please note that the agave nectar can be replaced with mollasses
Delicious & easy omelet using 2 whole eggs + 1 egg white (which adds fluffiness) and 1/2 cup of sauteed spinach.
I used blueberries in these but you can put any kind of fruit in them - I'm thinking sliced bananas next time...

I make this in a loaf pan. This is actually a recipe for Carrot CAKE. By baking it in a loaf pan instead of a cake pan, Jim will eat it for breakfast, toasted with some butter on it. Yum!!
This smoothie tastes like Jamba Juice, only creamier, thanks to the avocado. It is pretty high calorie though so I use it as a meal replacement.
Here is a moist muffin great for a snack or add a fruit and it's a great meal on the run. Could also be nice treat to that sunday brunch. Plus you get some veggies in with anyone being the wiser.
