Low carb, low calorie solution for an on-the-go type of breakfast and loaded with vitamins.
Substitute an equal amount of a different fruit to make something else yummy.
Combine flour, baking soda, baking powder and salt in one bowl.
Combine bananas, egg, erythritol, and vanilla in another bowl. Mix well and then add applesauce.
Add dry ingredients to wet ingredients, mix, and divide into 14 muffin cups.
Bake for 15-20 minutes at 350 degrees, or until a toothpick comes out clean.
Made with real eggs, this is a nice brunch item, or dinner.
