I got this from La Dolce Vegan by Sarah Kramer. It is put over rice, not added in. This time I used a baked marinated tofu that I bought, I just usually use firm tofu--1/2 lb, so recipe can be adjusted.
A great and protein rich supper. I use dried pinto beans and soak them, the recipe actually calls for a 14 oz can, but I use a cup of dried beans. It also calls for a 1/2 jalepeno, but I dont miss it, I guess if you want, you can add it in. Recipe is from La Dolce Vegan by Sarah Kramer. I love this book. This is great over rice--not added in.
I made this oatmeal cookie for the morning dash out to work. I dislike morning cooking, but like to eat oatmeal daily. I bake these on the weekend and have them ready for the workday mornings.
