I am one that loves gooey warm bread puddings of all kinds... this is a recipe I came up with to quell a hankering on a rainy Sunday. It uses pantry items you probably have in hand and though it is light you can make it gooey by drizzling the warm "pudding" with Smucker's Fat Free Sugar Free Caramel Syrup (but add the calories to your final count).
The house will smell so good when you make these!!
I make this omelet every morning - it's high protein, low fat, and so super delicious!
I rinse & drain all of the beans and throw them in a big tupperware - then I can easily access them in the morning.

A great lunch or snack. It is very filling for so few calories. You can add different herbs or low calorie vegetables without altering the calorie content too much. I enjoy it best using a medium hot salsa. And plenty of herbs. I sometimes use fresh basil as well as the chives.

Ingredients:
Plantains, 250 grams (remove)
Herring, 100 grams (remove)
Onions, raw, 1 cup, chopped (remove)
Red Ripe Tomatoes, 1 large whole (3" dia) (remove)
*Hot Chili Peppers, 1 pepper (remove)
Cabbage, fresh, 100 grams (remove)
Palm Oil, 1 tbsp (remove)
Snapper (fish), 1 fillet (remove)
Thyme, ground, 1 tsp (remove)
Curry powder, .5 tbsp (remove)
Not super low-cal, but make a very filling breakfast with good fats and protein.
