Brunch Recipes (Most Popular)
I modified one of the SP recipes to include whole wheat flour instead of white flour for this recipe. In addition, these recipe calculations are for my particular recipe not SP's recipe.

Needed to use left over Challah, fat free (or as near as possible). This first rendition was not bad but needs more seasoning.
Update
Had some for lunch and on a whim used the last bit of Rose City Pepperheads Mango Madness. YUMMMMMMMMY! In fact, it would be better with just a plain, non-marinated tempeh (the crispness of the tempeh survived the baking nicely). That would also reduce the sodium level considerably. Can't wait to try this again. Just have to figure out where we found that jelly. (It's both spicy and sweet, made with sweet red peppers and mango peppers.)

This is a deliciously sweet pastry with ground pecans, brown sugar and generous smothering of molasses glaze. The technique for shaping this bread is easy, and when cut and unfolded it reminds me of two elephant ears.
Yield: 2 coffee cakes, 12 servings
If you don't use the pie crust you'll be making this a really low calorie dish :)
Good for brunch or a light lunch serve with an appetizer of shrimp (toasted with the pecans) and apple salsa for dip.
Low carb and gluten-free pancakes. These are not exactly like "normal" pancakes, but are great when on a low carb diet. They are even better with blueberries mixed in or fruit on top.
with the right texture and browning real hash browns won't be missed. just play and adjust amt used to your own liking, experiment, that how i came up with this.
