It is a stuffed Indian Bread which is ideal for brunch
This is from Good Housekeeping with some changes of my own. Makes a quick supper or lunch. Delicious in hot weather when you don't feel like heating up the kitchen. You can add other ingredients to this as well, such as green beans, cherry tomatoes, fresh herbs, or stuff tomatoes with it. (Not reflected in nutritional info)
Cook the onion, Bacon and Garlick in the oil. Cook the potatoes and chop into 1cm cubes and add to the bacon mix, cook another couple of minutes. Take off of the heat and let cool.
Mix the eggs, milk and salt together and add to the bacon mixture. Cook the vegies slightly. Add Flour and baking powder and cheese along with the vegies to the bacon mixture and mix untill just mixed. pour into a dish sprayed with oil and bake at 200 degrees for around 20 min.
This is also great if you want to omit the bacon.
Assemble ingredients the night before, and bake this casserole in the morning.
A fresh and nutritional open sandwich. Great energy boost for the day. Fiber and almost all food groups.
