A family favorite that we have several times a week. So easy to make that we make it even on school days. The servings are according to the waffle iron that I use. The waffles are about 4" square and about 1 inch thick.
We went to the Epcot food and wine festival this year, and I fell in love with the Godiva Iced Coffee at the Belgium stand. This is my attempt at making a version at home, hopefully a little lighter than I'm sure the original was!
Delicious! This banana cake has a nice moist texture and is full of heart healthy ingredients.
Serve this as a thick sauce over rice for supper. Or- eat as a thick puree soup. Absolutely delicious! (A Moosewood recipe)
I love to make this on Sunday for a quick easy breakfast durning the week. I also find it's a great way to get a veggie serving on to the menu in the morning.
Serve it with a side side of fruit and you've got your self a great breakfast.
This is a low carb version of the traditional egg casseroles. The veggies can be swapped out with whatever you have on hand.

This is adapted from the Cooking Light "Rosti Casserole with Baked Eggs". By using sweet potatoes instead of regular potatoes, goat cheese instead of Gruyere, and adding black beans, this recipe punches up the fiber and taste!
