I found the original recipe here on SparkRecipies by LSTUDEE. For my diabetic husband, I skipped the sugar and for myself I used fat free milk. This bread is fabulous, but I found I had to cook it a little longer.
Make with rainbow rotini pasta--or even better is a Christmas Tree shaped pasta found in specialty shops. The red and greens are very festive. I use Best Foods Canola Mayonnaise which is half the calories of regular mayo--you could go fat free or olive oil mayo too. I'd like to try it with plain yogurt, but haven't yet.
This is not your typical chocolate chip / chunk cookie - 4 oz of white chocolate gets melted into the eggless batter, then UNSWEETENED chocolate chunks get folded in along with just a tiny pinch of mini bittersweet chips too! Definitely a grown-up cookie!
