This is a delicious sweet chili that will amaze even the best cooks. It is simple to make and freezes nicely in small containers for a quick meal. Great with tacos, turkey burgers or over rice! Only about 185 calories per serving
This is the only bean and grain recipe you will need, just fallow this basic recipe.
When using cooked vegetables use just one. When using raw mix two or three.
Basic Bean and Grain Salad
2 cups canned beans ( black, kidney, pinto chick peas, blacked eyed peas)
2 cups whole grains (brown or white rice, barley quinoa, couscous, bite size pasta)
3 cups bite size cooked or raw veggies (see above note)
1/2 cup extras (sunflower seeds, nuts,cheese, olives sun dried tomatoes)
1/4 medium onion or 4 thin sliced scallions
1/4 soft fresh herbs (cilantro, parsley or mint)
dressing; Make your own 1/4 cup extra-virgin olive oil, salt and pepper, and 4 tsps of vinegar or lemon juice.
or
1/3 cup of store bought vinaigrette .
This is a hearty chili with lots of Veggie and just a hint of meaty godness.
Homemade veggie burgers are the BOMB! This makes a BIG batch because I like to freeze them. Takes a little bit of time to make and bake, but its well worth it!
Throw these together in your blender before heading off to work, then chill in the office fridge for a satisfying lunch. Bring your garnishes in a separate container (avoids 'weirdness')

These are an easy fish taco that tastes super awesome. I have a separate recipe for a fish taco slaw that i use as a topper.
If you have more people or want leftover just keep doubling the recipe; potato salads aren't an exact science.
