a quick and healthy way to get the fried potato taste without all of the fat
This side dish is simple to make and won't weigh you down. It's the perfect complement to a char grilled lean burger or a great piece of grilled fish.
The pasta is like little pearls that are easily coated by your favorite dressing.
-2 cups cooked whole wheat Acini de Pepe pasta (or Orzo or any very small pasta)
-1/2 cup each celery, red pepper, fresh baby peas
-1/4 cup sweet vidalia onion (or to taste)
-1/2 cup mayonnaise (or use your favorite salad dressing) I prefer mayonnaise to make it more like macaroni salad.
-1/2 tsp each celery salt, black pepper, red pepper, garlic powder, oregano, basil
-2 chopped hard boiled eggs (optional)

Fried zucchini probably isn't the best way to eat a vegetable, but its definitely delicious, and is great as a cook out side dish or as an entree.
