for Mocha: mix 2 tsp instant coffee with 1 tsp hot water and mix in after flour. After cookies are cooled dip into melted chocolate

*I didn't have buttermilk on hand so I used 1Tbls lemon juice in 1Cup of milk, let it set for 5 minutes or so and that is the substitute for Buttermilk (you can use 1Tbls vinegar instead of lemon juice if you like)
