There was one Midwestern friend who was a great cook. She shared many of her recipes with me and I worked them into our family dinners. This one has the great eclair taste, but in a torte so you can manage your serving size.

This is a fairly healthy truffle recipe. You can cut the agave in half and it will still taste fine. Refrigerate the truffles after making them, they will be very soft otherwise

This is a recipe from my MIL. This is SO light tasting and delicious! We loved it! It tastes like you're eating a full fat cream cheese cake, but with only 208 calories per serving....you'd never know.
Moist, fudgey, chocolatey cherry cupcakes for only WW 3P+ each!!!

You can make this even healthier by making the angel food cake by hand without fat or sugar. Also, experiment with using another sweetener than confectioner's sugar -- that's a tough one. Either way, this is a light, delicious desert.
