Using just four ingredients, these chocolate Bailey's truffles are simple to make and fun to eat. These can easily be made ahead to save on time. Roll them in cocoa or chocolate sprinkles instead of sugar, if desired.

I'm calling these "European" Pancakes as opposed to the ones i have come to know as American Pancakes, because mine are thin and about 8" in diameter, instead of small, thick and fluffy.
