This is modified from a high calorie recipe that my family loves. This was a lighter version that still passed the taste test.
This is adapted from a recipe from Thornton Winery in Temecula California.
This pizza is delicious as an appetizer for guests.
It requires some prep time, but it is well worth it!!
For a veggie version, replace chicken with sauteed marinated tofu
You can manage the fat content down by making your own peanut sauce. I use A Taste of Thai Peanut Sauce mix (available in the Asian section of your supermarket) made with light Coconut Milk.
I prefer Boboli's whole wheat pizza shell, which increases the fiber in the recipe.
Cover your basic grilled chicken with the zesty herb topping for an anything-but-average meal. It also works well over steak or fish.
Delicious mix of cooked veggies with a little sauce to taste. I swear, anyone can LOVE this dish.

This is one of my husbands favorite Mexican dishes, and this is my lower fat & calorie version. Enjoy!
