This recipe makes an elegant and delicious dinner for guests or a romantic meal for your sweetie. It may sound tedious for me to insist you use fresh artichokes but you will not get even close to the intense artichoke flavor with canned or jarred artichokes. It's worth the effort.
Also, we are used to pesto only referring to a basil ingredient. However, the word pesto simply refers to a "pestle", meaning to grind or crush in a mortar.
So good & low carb. I will be working on a potato salad using this vegetable! Tastes better than the cauli mash recipes!
preheat oven to 350. mix flour, bk pdr, salt. in other bowl mix butter and sugar till fluffy, then add eggs one at a time, then add cheese, then add dry ingredients. put into 12 muffin cups bake 15 to 20 minutes.
These are wonderful satisfying meatballs you bake in the oven. Chipotle barbeque sauce mixed into the meatballs before baking gives a lushily rich and spicy taste with fewer calories than if you dipped the meatball into the sauce.
Adapted from Veganomicon. I cut the chili powder from 3 T to 1 T, omited the 1 T mustard, and substituted 2 T brown sugar for 3 T maple syrup.
