I originally tried this recipe with Basa Fillets and it turned out AMAZING!! But I am sure it would taste just as good with Pollock, Haddock, Sole, Pickerel, Perch - or most white fish.
1. Place 4 small chicken breasts in a ziplock with italian dressing to marinate for 30 minutes. Then, grill until they are about 1/2 done.
2. Place in baking dish side by side, and stop with tomato/basil mixture. Then sprinkle cheese evenly over 4 breasts.
3. Bake at 300 for 15-20 minutes, until chicken is cooked through.
4. Enjoy!

This is a healthier version of the gawumpki that my polish grandmother made when I was a little girl. I used the crockpot instead of the oven and I substituted ground turkey for ground pork, olive oil for butter, brown rice for white. The result is a healthier family favorite - even my kids like it!
In West Virginia where I live, Ramps (also known as wild leeks) are in season. I am not originally from here, and felt I must try them. Ramps are similar to a green onion, with more of a garlicy taste to them. They are quite delicious. This recipe was a combination of several that I found. If you don't have any ramps or wild leeks, leek or even onion could substitute. I think next time I will cut out the butter and cook the bacon first - then brown the chops in the bacon fat.
