I tend to put in what ever kinds of veggies I have around so mine is always a little different. But always tasty!
I make this recipe on the week end when I have time and am going to have a busy day. It has complex carbs and plenty of protein so if I'm too busy to eat as I should my blood sugar doesn't hit the floor in the afternoon.
I make this up at the beginning of the week and eat it as a side dish all week long. It is wonderful hot or cold in salads.
A combination of gluten free cookie recipes were forced into a room together to create this cookie.
Use 1 cup of milk and add as much water as needed to make pancake batter the right consistency.
Allow batter to rest for 30-60 minutes before frying on hot griddle.
If desired, top with 1/2 cup of apple cinnamon greek yogurt (not included in the nutritional info).
Most ingredients you will have on hand for this simplified version of apple crisp. Lots of Fiber!
