This recipe is lower in carbs than most gluten free crusts that are high in starches. I can have some starch but don't like eating highly starch meals. I think this crust taste great and is limited in starchy flours.
This recipe was originally for donuts but I don't have a donut pan so changed it a bit and used it in cupcakes. They taste great and you could add a few tablespoons of chocolate chips to make them more indulgent.
These muffins are moist and dense you could add more sugar if you wish but I like them lightly sweet. I also think they taste sweeter cold out of the fridge.
Totally customizable - this is a great base to use for whatever "clean" and healthy muffin you want to make. You can divvy up the batter and add different things like chunks of apple, chocolate chips, blueberries, nuts, etc. and make several different kinds at one time. So far I like dividing the batter in half, and to one half, adding 1/4 c. PB2 and a handful of chocolate chips and the other half chunks of fresh apple.
Soooo warm and yummy! You can lighten it up even further by substituting egg whites, but my chickens work too hard for me to do that :D
½ teaspoon Garlic granules
16 ounce thawed (frozen) Broccoli spears, thoroughly drained of liquid
1 cup shredded cheddar cheese (provolone is delicious as well)
1 Eggs white
1 cup Sesame Rice Crackers ground fine
¼ cup Grated Cheese
¼ teaspoon Garlic granules
¼ teaspoon Onion granules
¼ teaspoon Salt
Optional crushed Red Pepper
Olive Oil (enough to coat bottom of fry pan by 1/8 – ¼ inch)
